Campfire Sausage, New Potato & Green Bean Packets
Total Time: 45 minutes • Serves: 4
Schnucks nonstick cooking spray
1 large onion, cut into 4 thick slices
1-1/2 pounds red new potatoes, cut into 1-inch pieces
1 pound smoked, cooked sausage, split lengthwise and cut in half
1 bag (12 ounces) frozen green beans, thawed
1/2 cup beer or Schnucks chicken broth
1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
Tear four 12 x 24-inch sheets heavy-duty aluminum foil. Arrange sheets horizontally; spray with cooking spray. On right center of each sheet, place 1 slice onion; evenly divide potatoes, sausage and beans over onion. Cupping foil slightly, evenly pour beer over sausage mixture; sprinkle with salt and pepper. For each packet, fold left side of foil over sausage mixture; crimp edges of foil to seal tightly.
Place grate over medium campfire; place packets on grate and cook 30 minutes or until potatoes are tender. With scissors or knife, cut an ‘X’ in center of packet; carefully pull back foil to open.
