Chicken Parmesan Meatloaf

Schnucks nonstick cooking spray
2 packages (16 ounces each) fresh ground chicken
3 large garlic cloves, crushed with press
2 Schnucks large eggs
1 small onion, minced (about 3/4 cup)
1/2 cup finely shredded Asiago or Romano cheese
1/2 cup Schnucks Italian style dried breadcrumbs
1/2 teaspoon salt
1 cup marinara or basilico pasta sauce, divided
1/2 cup Schnucks shredded mozzarella cheese
1. Preheat oven to 400°F. Line rimmed baking pan with aluminum foil; spray foil with nonstick cooking spray.
2. In bowl, with fork, mix chicken, garlic, eggs, onion, Asiago cheese, breadcrumbs, salt and 1/2 cup pasta sauce until well combined. Do not overmix. In prepared pan, shape chicken mixture into 8 x 4-inch loaf.
3. Bake meatloaf 45 minutes. Remove meatloaf from oven. Spread remaining 1/2 cup pasta sauce over meatloaf and sprinkle with mozzarella cheese. Bake 5 to 10 minutes longer or until cheese melts and internal temperature reaches 165°F. Let meatloaf stand 5 minutes before slicing.
