1 tablespoon Schnucks olive oil
1 package (about 1-1/4 pounds) Schnucks Natural boneless, skinless chicken breast fillets
1/4 teaspoon salt
1/4 teaspoon plus 1/8 teaspoon ground black pepper, divided
1/2 tablespoon Schnucks all-purpose flour
1 cup Schnucks half-and-half
1/4 cup grated or shredded Parmesan cheese
1/4 cup refrigerated basil pesto
1. In nonstick 12-inch skillet, heat oil over medium heat. Sprinkle chicken with salt and 1/4 teaspoon pepper. Add chicken to skillet and cook 6 to 8 minutes or until chicken loses its pink color throughout and internal temperature reaches 165°F, turning once halfway through cooking. Transfer chicken to plate.
2. In same skillet over medium heat, with whisk, stir in flour and cook 30 seconds, stirring. Add half-and-half; heat to boiling. Add cheese and stir until melted. Remove skillet from heat. Stir in pesto and remaining 1/8 teaspoon pepper. Serve chicken with pesto sauce.
