Fruitcake Bars

Makes: 48 bars


1/3 cup Schnucks unsalted butter
1 box (11 ounces) vanilla wafers, finely crushed (about 3 cups)
1 cup chopped pecans
3/4 cup pitted, chopped dates
1 container (4 ounces) green candied cherries, cut in half (about 3/4 cup)
1 container (4 ounces) red candied cherries, cut in half (about 3/4 cup)
1 container (4 ounces) candied pineapple slices, chopped (about 1/2 cup)
1 can (14 ounces) sweetened condensed milk
1/4 cup bourbon whiskey or milk

1. Preheat oven to 350°F. In microwave-safe small bowl, heat butter in microwave oven on high 40 seconds or until melted. Pour melted butter into 15 x 10-inch metal baking pan, tilting pan to spread; evenly sprinkle with crushed wafers. Arrange pecans, dates, cherries and pineapple over wafers, gently pressing down into crust.

2. In small bowl, combine sweetened condensed milk and bourbon. Evenly pour milk mixture over fruit and nuts. Bake 20 to 25 minutes or until top is light golden brown. Cool on wire rack 20 to 25 minutes. While still warm, cut lengthwise into 6 strips, then cut each strip crosswise into 8 bars.

Each bar: about 110 calories, 5 g total fat (2 g saturated), 5 mg cholesterol, 40 mg sodium, 16 g carbohydrate, 1 g fiber, 13 g sugars, 1 g protein
