4 slices Schnucks hardwood smoked bacon, cut into 1/2-inch pieces
1/2 green bell pepper, cut into 1/2-inch pieces (about 2/3 cup)
1/2 red bell pepper, cut into 1/2-inch pieces (about 2/3 cup)
1/2 small onion, diced (about 1/4 cup)
1 can (15 ounces) Schnucks black-eyed peas, drained and rinsed
1 can (14.5 ounces) Swanson® less-sodium chicken broth (about 1-3/4 cups)
1/4 cup long-grain white rice
1/4 cup water
Schnucks hot pepper sauce (optional)
1. In 3- to 4-quart saucepan, cook bacon over medium heat until browned, stirring frequently. Add peppers and onion; cook 3 to 4 minutes or until tender.
2. Add black-eyed peas, broth, rice and water; heat to boiling over high heat. Reduce heat to low; cover and simmer 15 to 20 minutes or until rice is tender. Remove saucepan from heat; let stand 5 minutes. Serve Hoppin’ John with hot sauce, if desired.
