Mango-Coconut Smoothie

4 limes
2 packages (16 ounces each) frozen mango chunks, thawed or 4 to 5 ripe mangos, peeled, pitted and cut into chunks (about 4 cups)
4 cups refrigerated coconut milk beverage, divided

From limes, squeeze 1/2 cup juice. In blender, purée mango; add lime juice and 2 cups coconut milk beverage. Transfer to large pitcher; stir in remaining 2 cups coconut milk beverage. Serve over ice or refrigerate at least 1 hour before serving. Makes about 8 cups.

Each 1 cup: about 93 calories, 3 g total fat (3 g saturated), 0 mg cholesterol, 8 mg sodium, 17 g carbohydrate, 1 g fiber, 15 g sugars, 1 g protein

Cook’s Wisdom
If you prefer a sweeter drink, stir in 3 tablespoons granulated sugar or use the sweetened version of the coconut milk beverage.
