Open-Faced Philly Cheesesteak Sandwiches

2 ciabatta rolls, split horizontally
Schnucks nonstick cooking spray
2 tablespoons canola oil, divided
1 red bell pepper, sliced
1/2 large sweet onion, sliced (about 1 cup)
1/4 teaspoon salt
2 packages (7 ounces each) Oscar Mayer Deli Fresh shaved slow-roasted roast beef
4 slices Schnucks provolone cheese

1. Position oven rack 4 to 6 inches from source of heat; preheat broiler. On rimmed baking pan, place rolls cut side up; lightly spray with cooking spray. Broil 1 minute or just until toasted and golden brown, watching closely.

2. In 12-inch skillet, heat 1 tablespoon oil over medium-high heat. Add pepper, onion and salt; cook 3 to 4 minutes or until tender, stirring occasionally. Transfer pepper mixture to medium bowl; cover to keep warm.

3. In same skillet, heat remaining 1 tablespoon oil over medium-high heat. Add roast beef and cook 1 to 2 minutes or just until heated through, turning frequently. Evenly divide roast beef over roll halves; top each with 1/4 of the pepper mixture and 1 slice cheese. Broil sandwiches 1 to 2 minutes or just until cheese is melted.
