2 medium tomatoes, cut into 3/4-inch pieces (about 2 cups)
1 English cucumber, cut lengthwise in half, then cut crosswise into 3/4-inch pieces (about 3 cups)
1/2 large red onion, cut into 1/4-inch strips (about 1 cup)
1 package (2/3 ounce) fresh basil, leaves thinly sliced (about 3/4 cup), divided
1/2 (12-ounce) jar roasted sweet red peppers, drained, coarsely chopped (about 1/2 cup)
3/4 cup refrigerated The Pear Tree sweet onion house vinaigrette salad dressing, divided
1 bag (6 ounces) The Pear Tree croutons
1. In large bowl, combine tomatoes, cucumber and onion. Add 1/2 cup basil, peppers and 1/2 cup dressing; gently toss until well coated with dressing. Cover and refrigerate 30 minutes.
2. Add croutons and remaining 1/4 cup dressing to tomato mixture. Gently toss to combine before serving. Garnish with remaining 1/4 cup basil.
