Salmon with Cucumber Sauce

Total Time: 25 minutes • Serves: 4

1/2 English cucumber, peeled, if desired, seeded and finely chopped (about 1 cup)
1/2 cup light mayonnaise
1/2 cup Schnucks sour cream
1-1/2 teaspoons fresh lemon juice
1 garlic clove, crushed with press
1/4 teaspoon dried dill weed
1/4 teaspoon salt, divided
1/4 teaspoon coarsely ground black pepper, divided
1-1/2 pounds fresh salmon fillet, cut crosswise into 4 equal pieces

1. Place oven rack 4 to 6 inches from source of broiler heat; preheat broiler. Line rimmed baking pan with aluminum foil.

2. In small bowl, combine cucumber, mayonnaise, sour cream, lemon juice, garlic, dill weed, and 1/8 teaspoon each salt and pepper. Place salmon, skin side down, on prepared pan. Sprinkle salmon with remaining 1/8 teaspoon each salt and pepper. Broil 8 to 10 minutes or until internal temperature reaches 145°F and salmon is almost opaque throughout.

3. Slip spatula between salmon flesh and salmon skin to lift salmon away from skin. Serve salmon topped with cucumber sauce.
