Savory Bread Pudding Hush Puppies

3 Schnucks large eggs, divided
1-1/2 cups leftover Savory Turkey Sausage & Apple Bread Pudding (see recipe page 17)
1/2 cup Schnucks fine cut sharp Cheddar cheese
1 cup panko breadcrumbs
1/4 cup Schnucks grated Parmesan cheese
1 tablespoon water
1/2 cup King Arthur® all-purpose flour
3 to 4 cups Crisco® canola oil

1. In medium bowl, with fork, beat 1 egg; add bread pudding and Cheddar cheese and blend until well combined. Form bread-mixture into twelve, 1-1/2-inch balls (about 1 heaping tablespoon each) and place on large plate; cover and refrigerate 10 minutes.

2. Meanwhile, in small shallow bowl, combine breadcrumbs and Parmesan cheese. In second bowl, whisk water and remaining 2 eggs. In third bowl, add flour. Dip hush puppies in flour to coat all sides, shaking off excess; dip in egg mixture allowing excess to drip off, then into breadcrumb mixture pressing lightly so crumbs adhere.

3. In 3- to 4-quart saucepan with candy or fryer thermometer attached, heat oil over medium-high heat 5 to 6 minutes (oil should reach about 350°F). In 2 batches, cook hush puppies 3 to 4 minutes or until golden brown. Transfer to paper towel-lined plate to drain. Serve warm.
