Stovetop Chipotle Baked Beans

Total Time: 1 hour 10 minutes • Serves: 10

1 tablespoon Schnucks canola or vegetable oil
1 large onion, chopped (1-1/2 cups)
1 can (16 ounces) Schnucks pork & beans
1 can (15 ounces) Schnucks pinto beans
1 can (15 ounces) Schnucks red beans
3/4 cup Schnucks ketchup
2/3 cup Full Circle Morello cherry fruit spread
1-1/2 tablespoons chipotle salsa (available in select Mexican food aisles next to chipotle chiles in adobo) or adobo sauce from canned chipotle chiles
1/2 teaspoon salt

1. In 3- to 4-quart saucepan, heat oil over medium heat. Add onion and cook 7 to 9 minutes or until tender, stirring occasionally. Add undrained beans, ketchup, fruit spread, salsa and salt; heat to boiling over high heat. Reduce heat to medium-low and cook, uncovered, 50 minutes or until sauce becomes very thick, stirring occasionally and more frequently during last 10 minutes of cooking. Makes about 5-3/4 cups.
