Grilled Amaretto Peach Parfait

Total Time: 25 minutes plus cooling
1/4 cup plus 1 tablespoon packed Schnucks light brown sugar, divided
1/4 cup water
1/4 cup plus 2 tablespoons amaretto liqueur, divided
4 fresh firm, ripe peaches (about 6 ounces each), peeled, cut in half, pits removed
1 cup Schnucks whipping cream (half pint)
Schnucks nonstick cooking spray
8 almond biscotti, coarsely crushed (about 1 cup)
1 cup sweet glazed pecan pie pecans, coarsely chopped
1. Prepare outdoor grill for direct grilling over medium heat (or preheat grill pan 2 minutes over medium heat). In medium bowl, stir 1/4 cup brown sugar, water and 1/4 cup amaretto until brown sugar is dissolved. Add peaches; toss until all sides are well coated. Let stand 20 minutes, tossing twice.
2. Meanwhile, in medium chilled bowl, with hand mixer on low speed or whisk, beat cream to stiff peaks, adding remaining 1 tablespoon brown sugar and 2 tablespoons amaretto during last minute. You should have about 2 cups. Cover and refrigerate.
3. Remove peaches from amaretto mixture; spray cut sides with cooking spray and place, cut side down, on hot grill rack; cook 3 to 4 minutes or just until heated through and still firm, turning once. Transfer to rack to cool completely.
4. In 4 chilled parfait glasses, assemble each in the following order: 2 tablespoons amaretto cream, 2 tablespoons biscotti crumbs, 1 peach half, 2 tablespoons pecans. Repeat layers with 2 tablespoons amaretto cream, 2 tablespoons biscotti crumbs and 1 peach half; top with remaining cream and pecans. Serve immediately or refrigerate up to 1 hour until ready to serve.
