Spinach, Hearts of Palm and Bacon Dip

5 slices Schnucks hardwood smoked bacon (8 ounces)
1 package (4 ounces) chèvre (goat cheese) or 1/2 (8-ounce) package Schnucks cream cheese, softened
2 teaspoons jarred roasted garlic
1/2 cup grated Parmesan cheese
1/2 cup Schnucks sour cream
1/4 cup Schnucks mayonnaise
1 teaspoon fresh lemon juice
1/8 teaspoon salt
1/4 teaspoon ground black pepper
1 can (14 ounces) hearts of palm, drained, each cut lengthwise into quarters then cut crosswise into 1/4-inch-thick slices
1 package (10 ounces) Schnucks frozen chopped spinach, thawed and squeezed dry
assorted crackers, tortilla chips and/or crudité
1. In nonstick 12-inch skillet, cook bacon over medium heat 7 to 9 minutes or until crisp, turning occasionally. Transfer bacon to paper towel-lined plate to drain. When cool enough to handle, finely chop or crumble bacon.
2. In large bowl, stir chèvre and garlic until smooth. Add Parmesan and stir until well combined. Add sour cream, mayonnaise, lemon juice, salt and pepper; stir until well combined. Add hearts of palm, spinach and bacon; stir until well combined. Makes about 3 cups.
3. Transfer dip to serving bowl. Serve dip with assorted crackers, tortilla chips and/or crudité.
